One of my good friend's made this cake for her husband's birthday, I thought I knew exactly what a good carrot cake tasted like, but in fact this one is a little different...
The addition of extra egg whites and a few additional steps in the recipe make a welcome change, resulting in a rich yet light and slightly chewy (almost meringue-like) texture. I would definitely recommend. Find the recipe here, or or purchase the book here on Amazon.
